American persimmons are not the persimmons you find in the grocery store. These are a smaller variety that have a short shelf-life and are only available for a few weeks each year. Persimmons can't be picked too early or they have a very unpleasant taste.  Ripe persimmons have the texture of a date and taste like an earthy combination of an apricot and a raisin. We gather our persimmons daily as they ripen and make our jam in a process that takes alot of time, but is totally worth it. Use our jam in persimmon bread, cookies, or on a piece of toast.

Small is a 1/4 pint jar; large is 1/2 pint jar.
